An Unconscious Encore is an Empress Plum Saison. Brewed with a grist of German Pilsner malt, British oats, and Pennsylvanian wheat. Fermented in a new French oak foudre, conditioned on Pennsylvania-grown Empress plums and refermented in the bottle for natural carbonation.

Bottle from General Store a while back: pours orange with a relatively long-lasting white head. Aroma is plums, vinegar, some wood. Taste is a little acidic, rich plumy notes, sweet, not too sour. Maybe this would have been better had I drank it earlier. Damn, I need to stop stocking up on so many bottles.

750 ml bottle from Tired Hands General store. Bottle 12/4/18. Aroma is oak, sour wheat, light plum, acid. Flavor has oak, the wheat, and a long lasting sour finish. Sour fruits. For a sour it is good but I should have opened this about 18 months ago.

ABV: 6.0%. Hazy medium orange yellow colour with a average, frothy, good lacing, mostly lasting to diminishing, white to off-white head. Aroma is tart, fruity, vegetables, sour, wheat - oat, plums - dried fruit - sweet fruit, light hay - oak. Flavor is moderate sweet and acidic with a average to long duration, tart, fruit - peach, dry, plums - dried fruit - sweet fruit, light hay - oak - funk - grass. Body is medium, texture is oily to watery, carbonation is soft. [20200208]

Bottle, courtesy of mansquito. Pours orange with a persistent white head. Funk, brett, orange, tangerine, plum, barnyard, touch of white wine vinegar, little doughy, sweet apricot jelly, toast, little saline herbal thing at the end. Good full body with a creamy carbonation. Phenomenal.
