An Oud Bruin style ale conditioned two months in stainless steel, one month on raspberries. Primary with German Ale yeast, secondary with Pastore house culture of wild yeasts and microbes.

2/1/2022. Bottle at the New Year beer share. From 3at3, Ely. Pours clear copper amber with a frothy white head. Aroma of raspberry, wood, yeast, jam, brown sugar, touch of dried fruit. Moderate sweetness, medium sour. Medium body, oily texture, average carbonation. Dry and slightly salty finish. Good.

375ml bottle. Hazed deep blood red, thin sheet of cream-coloured foam atop. Aroma brings some nice raspberry jam, framboise sour. Taste is crisp and a nice gentle acidity and settled sour presence.. some lovely jammy raspberry notes. Wouldn't necessarily label it an oud bruin in a blind tasting, but there's a pleasant wild sweetness running through. Very refreshing.
