Clear, straw-yellow with champagne-like carbonation coursing upwards.
Light notes of lemon balm mix with light, floral honey and the lavender component, not overdone in the least, contributes to this light, heady, mildly perfume-like character. Delicate and with very light yeast notes mimicking a champagne to add just a touch of earth and must. No flaw or alcohol.
Delicate floral notes mix with a dollop of sweet honey and then are dispersed about the palate via the spritzy carbonation. Just a touch of chewiness to it, but otherwise light and refreshing with a touch of acidity and mustiness giving depth/complexity. Floral/perfume-like character lingers on. Dry and zesty with citrus character throughout being very light and near-perfectly done. Excellent stuff. Sparkling mead really is fantastic. It helps alleviate the heaviness/syrupiness/dullness often found in the still beverage.
