We pressed a batch of cider and dessert apples from Cockhaise Mill Farm back in 2015 and come the summer, well, it hadn’t had enough time yet. So we poured it into old oak barrels and let it sit. The result shows that sometimes patience is the most important ingredient. Bursting with deep rich tannins over a fresh acidic base, the apple tones balance beautifully with the oak.

330ml bottle from Bignose & Beardy. Oakhaisy Barrel Matured Dry Cider 2015. Golden colour, afew short-lived bubbles on top and aroma of oak barrel, sourish apple, woody funk. Taste is drying, oaky, wood, barrel, vanilla, tart soured apple, with some citric acidity and mellow tannins. Medium bodid, low carbonation, dry tart citric tannic finish. Nicely drinkable.
