A shepherd strength mix of Dabinet and Michelin from Quarry Farm at Battle, with Cox, Spartan and Bramley from Little Shepherds, along with all number of varieties from Terrible Down. Picked late in the autumn sunshine. We’d almost missed the cider fruit: we got it so late it was pretty soft and pulpy. Yet it’s still gives a rich tannin depth and mouth feel to balance a clean acidity, the whole thing rounded off by an interesting smokiness. Naturally clear, uncarbonated, unpasteurised, wild fermented and slow matured.

330ml bottle from Bignose & Beardy. As Terrible Shepherd Medium Cider 2018. Slighty hazy golden colour, no head and aroma of light fruity apple. Taste is tangy, fruity apple, woody, some tannins and acidity, with an earthy hint. Oily mouthfeel, medium bodied, low carbonation, medium dry finish. Well balanced, nicely drinkable.
