At seasons end, we collected a final load of cider apples from Quarry Farm near Battle. They were soft and pulpy - we lost as many as we pressed. Despite frustration, the resulting rich umber colours promise all the tannin fullness you’d expect from Dabinett and Michelin apples balanced with some of Mick Scrace’s cookers for acidity and Spartan for sweetness. Naturally clear, uncarbonated, unpasteurised, wild fermented and slow matured.

330ml bottle from Bignose & Beardy. As Spartan Dry Cider 2018. Slightly hazy amber gold colour, afew bubbles on top and aroma of spicy apple, pastry hints. Taste is tart, astringent, herby, tangy apple, with spicy notes and earthy tannin. Oily mouthfeel, medium bodied, low carbonation, drying soft tannins at the finish. Nicely drinkable.
