Trium Fermentum is a Bretted IPA first fermented with a Saison strain and subsequently inoculated with two different strains of Brettanomyces in the bottle.

Immediately evident Brett. Claussenii and Lambicus, courtesy of Omega Yeast labs, smashes this beer with funky, fruity, pineapple and cherry notes, which compliments the galaxy hop beautifully. Shout out to Simply Hops for the mighty fine plant matter!

This truly unique beer is already delicious after only 1 month of inoculation, but it will be even better shared after a little aging to allow esters and carbonation to develop.

From tap at De Beugel, Arnhem. Bretty aroma with some fruity notes. Fairly bitter flavour, finishes dry. Medium body. Good beer, mostly brett funk in the aroma.

Bottle from the now-closed Brewklopedia, Leicester. Drunk at home. Dark gold, and not quite clear. It's a gusher, so even with the best will in the world it's got a large rocky white head. Bready yeast, candy sugar, some cheese and farmhouse notes. Taste is surprisingly sweet and light, with a spicy character and an exceptionally dry finish. Light notes of honey in the aftertaste. Great stuff!

Bottle from Leicester Beer Festival at home. Hazy golden colour with a white head. Aroma light banana, floral, and yeasty. Taste dry. Rich and smooth body.
