Hops are not the only thing that is important in beer. This is just one element of many. Therefore, in the era of admiration for hops, it is sometimes worth looking at beers that focus more on malts.

We did it and we brewed our Koźlak, or Bock. An unique beer with a characteristic ruby ​​color and an essential caramel-hoppy flavor. The durable, fine-bubble head is light and only slightly tinged with the color of the beer. The aroma, of course, has hints of malty, reminiscent of dark bread. In addition, a delicate plum and raisins. Strong malt flavors are well-balanced with bitterness.

The Polish name “koźlak” is a translation from German, where “bock” means a goat. The word “bock” itself comes from the Hanseatic city of Einbeck in northern Germany. This is where, since the 13th century, strong top-fermented beer has been brewed using wheat malt and barley malt. Almost every inhabitant of this city was involved (directly or indirectly) in brewing. Great importance was attached to the quality of the beer, so the beer was always tasted before being sold. The one that did not pass the “check” was simply poured out. Such good and even quality gained fame and popularity outside the country.

We have been brewing Koźlak since 2003.

It works well as an addition to smoked and grilled meats and salami. It makes a great combination with all cheeses: blue, baked, fried. It also works well as an addition to desserts and ice cream.

500ml bottle. Clear, dark ruby colour with small to average, frothy, half-way lasting, minimally lacing, sulphureous head. Sweet-ish, dark malty aroma, notes of malt lozenge, a touch of caramel, some nutty aspects. Taste is sweet-ish and slightly bitter, toasty, dark and caramel malty, hints of malt lozenge, a touch of burnt caramel, nuts, nougat, fruity hints of cherry; minimally pungent, bitter, alcoholic finish. Oily-watery texture, smooth and soft palate, fine and soft carbonation. Slightly unpleasant bitterness (rather evokes burnt caramel associations than that it seems to be hop originated), apart from that quite clean and simple - OK.

Bottle. Pours clear dark amber with an off-white head. Aroma: caramel, toast, toasted bread crust. Taste: moderate sweet & light bitter, overall malty with bready notes & a slight bitterness. Medium body with loose carbonation.

Bottle from Beers Of Europe. Pours an almost clear mahogany colour with a medium sized thick creamy beige head. Lively carbonation, nice lacing. Aromas of dry dark fruits, caramel, molasses and toasted brown bread. Taste has the same notes as the aroma with added notes of cherries, leather, toffee and brown sugar. Medium to full bodied with a slick oily chewy mouthfeel. Dry fruit and sweet finish. it’s ok.

# 338; 6/2016. Velmi dobrý polský bock. Chuť výrazně po višních či třešních, která je ve vůni nahraznena obilností. Povedený kousek.

Clear deep brown, one finger tall ivory-coloured head. Nose: burnt sugar, treacle, dried fruit. Similar taste. Medium sweet. Lively carbonation. Passable but quite simple.
