Château to piwo szczególne. Pionierski projekt, którego początki sięgają 2013 roku. Młode piwo, prosto z fermentacji, trafiło do sprowadzonych z Francji beczek po winie. Pomysł szybko okazał się początkiem serii. Kolejne warki wychodzą w nieregularnych odstępach. Château potrzebuje czasu. Dojrzewa niespiesznie. Wersja 2021 spędziła w dębowych beczkach ponad 24 miesiące. W aromacie wyczuwamy nuty dębiny, czerwonych owoców i rodzynek. W smaku owoce uzupełnia wanilia. Dzikie kultury drożdży i bakterii nadały Château przyjemną kwaśność i nieprzeciętny charakter. Aromat i smak wymykają się tu tradycyjnemu myśleniu o piwie. Daj się zaskoczyć!

W aromacie fajna beczka acz nie mega intensywna, migdaly i ta biala masa z nich, wanilia, costam jeszcze. Winne. Kwasnosc taka cytrynowa

At Piw paw, Warsaw, February 2014. Shared with lovely Anja. Sample. Clear yellow, lasting creamy head. Intense aroma of wine, barrel and fruits. Sour, but pleasant. Full taste, thick as a syrup, light finish. Interesting, but not sensational.

Impressed by this one. Very soft malt base and acidity with leather funk and plenty of wine barrel presence. Light tannins. Very complex.

Got a bottle when visiting Artezan recently.BB 30.04.2015, sampled on March 20, 2016. Shared with 4 mates.50 cl bottle.Clear dark reddish brown color, bubbly smallish tan head. Acidic, acetic, a tad sour, tart berries scent. Tart, acetic, wood, light sweet taste. Acetic, tart aftertaste. Fizzy high CO2 mouthfeel, very low bitterness.

Bottle courtesy of Gnoff. Pours hazy reddish brown with a big frothy goldenish offwhite head that leaves some thick sticky lacing on the glass while dissipating. Smell is malty and fruity with dark bread, caramel, lemon juice, lime juice, grape must, sweet forest raspberries, hay, moist wood, minerals, leather, barnyard and lemon zest. Taste is tiny sweet, slightly sour, slightly malty, fruity and tiny funky. Mouthfeel is soft, slightly dry, slightly tart, very tiny tannic astringent and medium bodied. Finish is slightly sour and slightly funky with soft malts, balanced tartness and light tannic astringency. Very balanced sour... Surprisingly sublime really. Love this!

Bottle, 7%. Sour and funky aroma, more acetic than acidic. Quite mouthwatering. Cloudy dark red brown colour. Small head. The flavour is funky and sweet. Sugary with a good mild vinegar note. Has a good sourness, but also a little sour rag. On the whole, quite good.

Bottle. Pours clear dark copper brown with stable off-white, greyish head. Clear, vinous aroma. Vinous flavour, with deep notes of oak barrel and touches of spices. Low carbonation. Lingering, vinous aroma. Good.
