Our cider is produced from no less than 20 different varieties of apples. This gives it a very nice balance between the sweet, bitter and acidic varieties. After a fermentation process that is modified in its length to produce the “brut”, “demi-sec” and “doux” varieties, and a light filtration, it is bottled in order to naturally develop its own natural gas. This gives it the fine bubbles that we are known for.

Bottle from Astor Wines. 2011 stamped on the cork. Not a mushroom, so I was able to squirrel away the rest for later without trying to hunt down a surrogate cork.
Fluted tulip. Dark/dirty mellow yellow body. A spritz of life before going still.
Mild funk. Mostly yeast, apple skin, & hay upfront. Coarse, sharp, green fruit, ugly rubber.
Super yeasty, but taste starts off kind of juicy, moving towards bitter/acidic apples. Big carbonation. Vanillin & smokey plastic creep in. Soapy. Dry, with an incredibly calcified/chalky finish. Noticeable sufites.
Wasn’t terrible, but it was just a bit too ugly at times to be enjoyable.

Corked bottle from Le Comptoir du Terroir, Paris; vintage 2008, 2 years old
Hazy deep blond color; huge foam, reducing quickly; nice fine perlage, sustaining a thin head. Nice aroma of apples, apple skins, wood; it’s also citrusy, some magnesia. Dry cider, as promised; it has a good apple flavor, with a wood touch, and a good level of acidity; it has a light astringency, less than other French ciders, but enough to give it some character. Very good.

Bottle 750ml.Light light unclear light to medium yellow orange color with a average, frothy - fizzy, fair lacing, fully diminishing, off-white head. Aroma is moderate apple, applesauce - apple pie. Flavor is moderate to light light heavy sweet with a average duration. Body is medium, texture is oily, carbonation is flat. [20100910]

(Bottle 75 cl) Pours a hazy, pale golden with a bubbly, rough, off-white head. Lightly tart apple aroma. Medium body with very fresh apple notes and throughout a perfect balance between sweetness and apply acidity making this rather pleasant. 170707
