Our cider is produced from no less than 20 different varieties of apples. This gives it a very nice balance between the sweet, bitter and acidic varieties. After a fermentation process that is modified in its length to produce the “brut”, “demi-sec” and “doux” varieties, and a light filtration, it is bottled in order to naturally develop its own natural gas. This gives it the fine bubbles that we are known for.

Bottle, many thanks anstei! Unclear orange color with white head. Aroma is funk, stables, super brett, red apples. Taste is red apples, barn, leathery, almost dusty mineraly finish. Foamy carbonation. A bit sweet, but lovely funk there!

Bottle from Craft Brewed shared at a Lucky Bamboo share. Pours a mostly clear gold with a full 2 fingers of white, spritzy foam that lingers, then dissipates. Big dried pear aromas with granny smith apples, tart crab apple. Some floral notes with hay and slight must as it warms. Less interesting on the palate. Sweet apple with some light overripe pear, mineral and grass. Not as funky as I'd hoped but the nose is pretty good.

750ml bottle pours out hazy golden topped with a fizzy white head. Nose is nice big funky barnyard sweet apple notes and some cheese. Taste is more of the nice sweet apples tons of funky notes lots going on. Very fun.

Wow! Cork pops out with cage and big bang, and crazy sour aromas like Brett yeast was in there, throwing some funkiness. Hazy colour with a white top, seems to stay a small layer as carbonation is lively. Light apples, pear and earth in the nose. The taste is not as funky, thankfully. Mildly sour, mildly sweet with light fruity notes of apples. Seems like a real handmade cider, but not one that gets me going. Not a fan of funk and cider.

750 c&c from the Arden Whole Foods in Sacramento, CA. Pours dark translucent gold with a white head. Aroma of funk and apple skins. Med body at least. Flavor starts funky in a nice way, moves on to apple and skin. It’s not really dry, but it is rather astringent. Perhaps not the best Norman cidre, but very enjoyable.

750mL bottle, pours a hazy golden with a small white head. Aroma brings out lots of champagney notes, barnyard funk and dry leather. Flavour is very funky, with lots of champagne yeast, farmhouse funk and medium sweetness on the finish. Wonderfully constructed. Somehow the sweetness is prominent while the finish is bone dry. Excellent.

Bottled, 11/19/13, 2011 vintage. Pours a hazy amber color with a thin ring of head. Aroma of dry apples, mild barnyard, hay, glue and vinous notes. The taste is sweet apples, tannic notes, mild must and vanilla. Medium bodied, good balance, soft carbonation. Nice cider.
