Coeur de Cuvée is a series of blends of some of our finest wine barrel-fermented and aged saisons. This fourth blend has been nicknamed "Juicy" by our brewers, because we experimented with a large charge of Citra hops for "juiciness" when combined with our native microflora. It aged for more than a year before blending.

750mL bottle drunk 12/31/22. Clear bronze-brass. Solid, small, white head showing moderate-to-strong retention. Strong Brett-lacto (mostly lacto) with light acetic and soft oak. Vanilla, fruit, juicy acids and light honey and biscuit-like maltiness. Deep mineral and cherry-like brett with deep acetic acid that isnt super punchy but still leaves a vinegar-like character lightly. Soft, malty, heavily tannic and chewy with good honey-like maltiness. Vanilla-cherry, lots of lactic acid and moderate oak dryness. Drying out heavily. Definitely some balance issues here, as well as heavy acidity that goes a bit overboard. The mouthfeel is soft and the malt succulent, but it's just so acidic and tannic. Getting worse as it warms. Yeah this is just not enjoyable after it has warmed and breathed fully. Acetic and too tannic.

Bottle shared at the February PS tasting, 2/13/22. Slightly hazy gold, thin fizzy white head, good retention. Aroma of funk, floral, stone fruit. Taste is leafy hop, lemon, tea, stone fruit.

750ml bottle pours out golden topped with a small fizzy head. Nose is nice tart oak bretty notes and plenty citrus kick. Taste is more of the nice citrus hops brett funk and oak.

Bottle, shared by Chris M. Pours gold. Soft floral, lemon, grapefruit, apricot, lime, lemongrass, minerally, peach, champagne. Nice light spritz. Good.

Bottle from Chris M: pours gold with a white head. Aroma is funky, slightly sweaty, yeasty, little fruity. Taste is lightly sour, funky, some fruity notes. Quite good.

Sergey's hunt, tasting at Ryan's, bottle
Hazy blond colour. Farty aroma, light fruit. Not too dry, highly carbonated, there is something weird, a bit rubbery, probably some wine barrel, indeed some light acidity too; mild astringency in the finish.
But overall it's quite good.

Poured from 750mL bottle. Hazy blonde with small white head. Wild saison yeast, oak wood, light citra hops, very nice blend.

750ml (thx, Brent for proxying and Matt for helping with the border crossing) shared @ Ryan's. Appearance: hazy blonde with a white head. Aroma: amazing and complex with a bit sweet peaches and apricots. Taste: crispy, nice barrel notes, a bit ascorbic. Overall: good one.

Clearish gold with a small white head. Light funk and a touch of stone fruit. Stone fruit, light funk and clean pleasant finish.

750mL bottle, pours a clear golden with a small white head. Aroma is very rustic and wild, with lots of rustic wild yeast, gentle white wine, oak, and with a bit of Citra hops. Flavour is very complex, with lots of wild bugs expressing themselves in harmony, a deep rustic character, white wine, and oak. The yeast profile is really wonderful and the oak/wine couldn't really be better. Complex and wonderfully blended. Fantastic stuff.
