What does the name Noble Sour Beer mean?
Noble Sour is the name of some of our balsamic vinegars, and like them also the rare Noble Sour Beer was stored in balsamic vinegar barrels for a year. During this time, the micro-organisms in the barrel - wild yeasts, acetic acid bacteria and lactic acid bacteria - refined beer and an abundance of flavors produced: sweet fruity notes of cherry and plum, clear acidity, and spices. The base product of the Noble Sour Beer was brewed at 25 ° Plato original gravity of dark beer, which was fermented with three different yeasts, before it was filled in the balsamic vinegar barrel. It is a purely natural top class sour beer, where every mouthful offers new taste experiences, a beer for lovers and connoisseurs, but also adventurous.

Tap at Craft Bier Fest Wien. Quite lots of sourness with clean balsamico aroma and flavour. Nicely balanced with lots of fruitiness present in the base beer. Easy drinking and very tasty, though a bit simple overall.

Tap at Craft Bier fest, Vienna. Very dark brown color with low tan head. Aroma of grapes, vinous notes, spices, acetato balsamico. Tart taste with vinegar, vinous notes, red berries, cherries, coconut, spices. Tasty.

0,1l from tap at Craft Bier Fest Wien, shared by the gf. black color, small tan head. smells grapes, sweetness, strong spices, strong wood, notes of vegetable oil. full body, soft carbonation, slick mouthfeel. tastes very strong of vinegar, wood, coconut, spices, light roast / earthy notes. hard to taste much else. finishes with vinegar, notes of mushrooms and some wood. very vinegary on the taste (they are a vinegar brewer after all) interesting, I actually would drink this again. overall interesting.

From bottle at CBF Wien.
Dark brown body, with a quite small, creamy, beige head.
Aroma of coffee, dark chocolate, barrel, sour berries and cherries, vinegar.
Taste follows this, with more vinegar and some more leather, some booze.
Quite full, oily mouthfeel, with a soft carbonation.
Finishes sour, a bit roasty, with vinegar, leather, sour fruits, coffee, alcohol, some dark chocolate.

Interesting. Heavy and a bit boozy, with the sour, vinegar like notes and the dark roasty notes in equal measures. Maybe even a bit too heavy, but overall a really characterful beer.
