Spectre Sister is a blend of two extra pale beers produced in March and July 2018.
The worts were made with maize, wheat, oats and raw barley. They fermented in a freshly emptied cider barrel from Tom Oliver and an ex bourbon whiskey barrel.
The resulting blend conditioned in bottle for nine months, producing an effervescent, bright and delicate saison.
Bottled March 2020.

Bottle, 750 ml shared with Max, kajser27 and Miro B. Hazy yellow, white head. Funky, lots of fruit, citrus, apples, refreshing, juicy. More funk. Just a tad short in finish, but still mighty delicious.

Bottle. Watford Tasting. Aroma is fruity and vinous. Opaque gold. No head. Tart. Sour. Dry fruit. Light. Thin. Average-fizzy carbonation. Long dry astringent finish. They know what they are doing.

Can shared at the mbcw mixed beer celebration watford tasting. Thanks to Wingman. . A light hazed golden yellow coloured pour with a decent white froth. Aroma is tart, horsey funk, vinous funk, dry grape. Flavour is composed of tangy lemon, pithy citrus, grass, horsey funk, light vinegar edge. Lovely. Palate is tangy, sour, prickly carbonation.

Bottle split at MBCW '22 (Maudlin Beer Celebration Watford), thank to Dave, 13/05/22. Lightly hazed golden blonde with a white cap. Nose is citric zest, green berry must, damp hay, gooseberries, light funk. Taste comprises dry rot, wood must, green berry funk, straw, lemon rind, mellow barrel, tangy fruits. Medium bodied, fine carbonation, light drying close with a tarte drying close. Solid.

Bottled 2020. Easter 3x3, day 3 dish 1. Gravlax, red beet egg and dill. Very nice wild saison where the focus is on bright citric acidity. Good refreshing pairing with the fatty fish and sweet beets. Wouldn’t mind more funk though.

Bottle. Mills online shop. Clear, pale gold (minimal amount of sediment in this bottle, I noticed). Slim ring of lasting, white bubbles. Nose has a touch of spicy grain. Bright brett. Lemon rind. A little bready. Fresh cut oak. Some vanilla. Peeled apple. New suede. Taste has some grain sweetness, with a fresh apple tartness, and light, oaky bitterness. Smooth mouthfeel. A tad drying. Soft, foamy carbonation. Hint of acidity. Light oaky bitterness to finish. A good beer, but way off Blend 2, as it stands.
