When Brasserie Au Baron collaborates with 10 Barrel Brewing, it produces a winter-keeping beer called Old Man Winter, brewed with chestnut flour and Chinook, Magnum and Tradition hops in dry hopping.
Behind an amber color with off-white foam are aromas of caramel, toasted malt and dried fruits. On the palate, we find a beer with a pronounced character with flavors of dried fruits, alcohol, caramel, hops, grilled malt and chestnut with a fine touch of spices. It is an oily beer with low carbonation that leaves us with a dry and caramelized finish.

75cl bottle from Au Baron. Aroma has a nutty caramelised sweetness alongside some saison yeast. Flavour profile sees this nutty side progress nicely, mild fruitcake moments, distant hints of brown sugar, a dusting of winter spice. Really nicely presented winter saison, great harmony of flavour, excellent drinkability.
