We reverse engineered the delicate and complex profile of assyrtiko wine by substituting sugars and aromas with grains and hops. We then fermented it with a thiol producing yeast strain for an extra tropical fruit character.

Bottle, many thanks to Fin and ultimately Kostas for the generosity! Hazy golden color with white head. Aroma is actually white-winey, white grapes, juicy, very impressive. Taste is grapey, juicy, vanilla-like, sweet, a bit funky, really impressive that this only comes from the yeast. Oily mouthfeel, with soft and fine-bubbled carbonation. Drier than you would think in the end. Very impressive, I like this one!

Had this at home Wednesday 7th July 2021 listening to Steve Lamaqs Evening Session and getting ready for England v Denmark Semi Final of the COVID delayed 2020 Euro Championship. Pours warm gold with a haze, a white head atop. Yea this really straddles the beer/wine divide, fruity, zappy and with wine like characteristics throughout, however even at 13% it has a beer like drinkability, I am not sure what thiol yeast strain is but it really stamps it's thumbprint all over this, offering up a wild/light tart beer quality, grapey, white wine flavours flood through though and with a lingering fruity bite. Great.
