Following up on our release of Ambiente from 2019, we wanted to dig into our barrel stock and select barrels in which we thought would best lend themselves to the use of our "Mexican-Chocolate" adjuncts for this beer and a 2020 Barrel-Aged version.

We selected a blend that consisted of:
20% Vibes recipe (same as the Ambiente base) aged in TWCP barrel selects with Vanilla Beans (4 Roses and Jim Beam) for 33 months
60% D3 recipe aged in Willett Rye barrels for 24 months (same as the Rye BBT components)
20% OWK recipe aged in Buffalo Trace barrels for 19 months

Once mature, we added our blend of Ghana Cocoa Nibs, Madagascar Vanilla Beans, Fresh Ground Cinnamon and Dried Ancho Chiles and steeped until we felt that the barrel, the base beers and the adjuncts were all in a balance that represents our take on Mexican Chocolate.

0,75 litre Bottle, at a share. Dark brown with little head. Malts, vanilla, cinnamon, sweetness.

Bottle pours out black topped with a small tan head. Nose is nice sweet chocolate some spice peppers bourbon barrel vanilla and cinnamon. Taste is more of the nice sweet chocolate roast malts vanilla cinnamon bourbon barrel and a little spice.

2021 release ( 2020 edition ) thnx to Tom VVH. Pours black, no real head. Scent is full, bourbon, wood, balanced and thick. Very mild cinnamon. Taste is full, sharp, intense, boozy, bourbon (quite a bit of heath by the booze! ) . not as balanced as the regular version.

750ml bottle. Slick, oily and slightly roasty with some spiciness, bourbon, toffee, syrup, oak, vanilla, cocoa, cinnamon, hints of chili, coffee, chocolate and warming alcohol. Bottle. Pours black with small tan head that diminishes quickly. The aroma is strong cinnamon, cocoa, peppers, roast, bourbon, wood. Slick body, similar flavors to nose, cloying sweetness, boozy, enjoyed this.
