JI (She) is a Saison or a Belgian farmhouse ale which connects both the Old World and the New World. We use substantial amounts of low alpha hops for bittering and flavor which brings a lot of traditional character to the beer. Then we finish (whirpool + dry hop) the beer with some really nice New World hops to bring in some citrusy, lemony, and wine-like characters.

At first glance, She is a traditional Belgian – solemn and restraint who adheres to customary values. The traditional malt base sculpts the classic shape of Her body that is highlighted by turbulent fermentation of Wallonia yeast. The tamed bitterness of the noble hops only emphasizes her seemingly humble way. However, it’s just the initial impression of the chaste experience of Her. She is modern, She is outgoing, She wields bravura, and She will surprise you with unruly citrus hops of the New World, reminding of white wine by Her taste and aroma. She’s a Sensation. She is Saison.

50cl bottle. Pours hazy straw coloured with a white head. Fruity and somewhat floral with saison notes, hints of wheat and citrus. Moderate sweet with medium flavour intensity and light acidic notes. Quite enjoyable. --- Beer merged from original tick of Ji on 26 Sep 2021 at 14:11 - Score: Appearance - 6 | Aroma - 6 | Flavor - 7 | Texture - 6 | Overall - 6.5. Original review text: 50cl bottle.
