In our continued exploration of Farmstead® ales within various contexts and processes, we present a new beer: a lively, delicately tart, oak-aged ale with a malt bill comprised of 90% wheat and 10% barley, and hopped exclusively with hand-selected Hallertauer Blanc hops from Seitz Farm—our agricultural partner in Wolnzach, Germany. Bottle conditioning since early 2018, we have closely monitored its progress, anticipating its optimistic arc of development.⁣

375ml bottle pours a mostly clear gold with a nice cap of white head. Nose is very approachable, simple but plenty happening too, wheat and herbs, lemony without screaming tart, briny too, bubblegum and green grape. Before I hit flavor, the mouthfeel is lovely, tart, oily, round and dry. Crazy drinkable. Flavor is lemony, lightly herbal, natural wine, a little buttery barrel, wheat and some grist, dandelion tea, chamomile. Lovely.

LCI. Stunner. Light bright citrus and dry funk. Soft wheat. Easy clean balance with some earthy notes

Here we go again. Tart, wheaty and slightly funky with some farmyard and bretta sourness, hints of lemon and citrus.

375mL bottled Sep 1, 2021, drunk 7/18/23. Clear, bright brass. Head fizzles away instantly. Soft, bright, floral, dainty and clean with light white wine suggestions. Wheat probably softening things, with absolutely zero aggressivity. I mean, not that Hill hardly ever has acetic-bombs, but even the barrel tannin, wine and lactic character are about as mild as they can get. No alcohol or flaw. Touch of honey on the finish from the malt. Soft, indeed, with lots of white wine, a slick, wheaty texture with light, honey-like sweetness from base malt as well. Good depth, attenuation. Gentle lactic acidity coupled with bright, well-developed Brett. Herbal, floral and satisfying saline suggestions galore, really interesting and complex with the Brett adding lovely acidity, and even a hint of sulphury funk to complete the picture. Immaculately well-done, well-polished beer. Now I'm sad I didn't grab some 750's of it from the more recent batch.

Bottle. Pours clear yellow, small fizzy white head with good residual. Aaron's is bright hoppy citrus funk. Flavor is light tart, light plus funk, bright punchy hops, wheat malt. Light body, soft mouthfeel. Excellent

Pour at de Garde 10th Anniversary event. Pale golden pour with an ample white head. Aroma is very bready, fruit scone, light sweetness. Taste is brings a mild tart edge to the graint, malty brew, sweet, fruity and floral.

On tap at Tørst. Pours pale gold. Floral, white wine, herbal, tangerine, delicate minerally. Medium body. Fantastic.
