Hitachino Nest Ancient Nipponia is brewed with the rare Japanese Kaneko Golden Malt and Sorachi Aces hops. This "new" barley malt is a cross pollination between the European Golden Melon and the Japanese barley malt Shikoku. Originally used by Sapporo, this malt disappeared about 50 years ago.
A few years ago Mr. Kiuchi acquired 16 seeds from the Department of Agricultural History in Japan. Over three years and multiple harvests he was able to grow these 16 seeds into enough barley to malt and use on a batch of a new beer.
"Nippon" means Japan in Japanese....this version was dry hopped with Mosaic hops.
