Behind the dry-hopping and new name lurks the ever-beloved Hofstetten Christmas Bock.

Along with the heathy additions of Magnum, Aurora, and Select in the boil, this bock was also dry-hopped in our lager keller. This means we stuffed as many full-cone hops – fresh from the fields – as we could into a lager tank and filled the rest of the space with our bock beer. The beer was then left to mature for two months before it was once again enriched with hop oils.

To preserve all the wonderful flavors developed during the process, this beer goes directly into bottles without filtration.

Light-golden in color with a mild cloudiness, our Saphir-Bock shimmers tantalizingly in the glass. The floral hop aromas harmonize perfectly with the warm ester notes. When taken to the nose, you may make out hints of mandarin, lychee, and ripe pears. On the tongue, you'll immediately be struck by the full-bodiedness. As it moves back across the palate, the hop notes open up, revealing themselves in all their glory in the finish. The pleasant fruity-bitterness travels up the throat, across the palate, and into the nose, where it is greeted, once again, by the sweet ester notes of the yeast.

This constant play between full-bodied maltiness and floral hoppiness ensures an unforgettable drinking experience.

Draught from Ginger Manhattan. POured a cloudy yellow gold. SOme bread, a bit of maltiness. Ok but unspectacular.

Bottle. Blonde, hazy. Floral citrusaroma. Medium bodied. Citric hopbitter flavor with floral notes and tropical fruit. Slightly alcoholic. Malty sweet floral hopbitter finish with tropical fruit.

Bottle, many thanks Geiserich! Clear golden color with white head. Aroma is nice grassy wet hop like aromas, honey malt base. Taste is grassy wet hops, earthy, honey malt, nice juicy old world hops. Oily mouthfeel with low carbonation. Good Heller Bock, maybe a bit too cloying.

bottle from secret Santa 2016, thanks. 500ml pours yellow/golden with a white limited head. aroma is fresh, hoppy, citrus, straw, hay. 0,5 l bottle, Bought at Hof Luckmann, Bissendorf, Germany. If you ever be in the Osnabrück or Bielefeld area, visit them! Orange golden in the glass, little bit unclear. Big white foamy head. Looks good. Hop on the nose. Maybe with a little bit alcoholic elements and hints of burnt plastic. Taste has a balance between alcoholic bitterness, hop and a malty background. Increasing alcoholic sharpness. Later more floral hop influences. Strong and complex Heller Bock.

50cl bottle from trade with Sebilinz, many thanks! Pours slightly hazy dark golden colour with a mid-sized good lasting off-white head. Aroma of bitter aromatic hops, some peach, toasted malt. Taste of strong malt, mild sweet toasted malt, aromatic bitter hops, peach, nice!
