CYGNUS: Cherry began as as our three-yeear blended coolship Ale made using malted barely, unmalted wheat, and oats. Each batch was made using a coolship and allowed to cool overnight. While cooling, airborne wild yeast and other microbes inoculate the wort and are eventually responsible for 100% of the fermentation. The beer is fermented and aged in neutral oak barrels for 1-3 years, then blended and refermented on Montmorency tart cherries for an additional 2 months. Sweet cherry pie aroma and a light effervescence, with a tingling sourness on the finish. Each sip leaves you eager for the next. Fruit character may diminish over time, so enjoy fresh for full fruit flavor and aroma.

Fat på MBCC 2018, grönt pass. Blend A, från flaska. Rödorange/rosa med vit krona. Syrliga körsbärskärnor up front i doften. Längre bak lite stallig funkighet. Fin, lite lättare kropp. Körsbären är där även i smaken men här kommer nästan mer fram jordgubbar och röda bär, nästan lite röda vinbär. Mycket gott! Tack Samuel214

Bouteille 75cl @ Annual Tilquin Enthusiasts Admin tasting, merci Rich. Bottled 09/08/2016.

Bottle at GABF. Hazy pinkish appearance with a bubbly head. Funky and citrusy nose like Oxcart. The cherries have a nice flavor and add some depth. A touch acetic and acidic. Good but not on par with Allagash Cerise.

750mL bottle at BA Belgian Beer Fest, 9/17/16.
Deep, crimson-tinged pinkish-gold body shows high clarity and a pink-tinted, beige head atop with moderate retention.
Cherry pit adds a healthy dose of black pepper and very light medicinal character (in a good way) as the farmy funk of the lambic rises up to complement the fruit very nicely. Dry, fleshy-pulp, well-attenuated juices with lots of malic acid remaining and a hint of citrus mixing in with the pepper. These are cherries done perfectly/near-perfectly. I’m not normally in to fruit lambics nearly as much as the straight gueuze/lambic, feeling that at best, it adds a pleasant fruit flavor but still detracts somewhat from the beer elements of the lambic. It’s difficult to argue with that here, as the funk still comes through very nicely and is bolstered/deepened by the acidity and pit/skin character. No alcohol or flaw.
In the mouth it’s very tart, with high attenuation and more interesting fruit notes of black pepper, leather, medicine, vanilla and such. The funk element mixes in nicely, as well and the carbonation is tight, with a malty/wheaty texture that is soft and drinkable. Fantastic stuff, encouraged to see more from them.
