A long time in the making, Three Hills Brewing have teamed up with imperial stout specialist Damien Doherty of The Emperor’s brewery.

Both fans of Mexican food & smoked chillis, a molé inspired beer was born.

The base beer has aspects of Three Hills BPAVK base with a few adjustments & small addition of smoked malt.

Fermented with mollasses & Demerara sugar for added depth & complexity.

Conditioned on Mexican cacao nibs & morita chipotle chillis.

roasted malts, licorice, faint chilies, faint coconut in the aroma. Flavor has a good chili bite and good smoke and a quite solid roasted malty base. flavor is also very slightly sourish which does not really fit in, not sure if it's the chilies or something else. the sourness is sort of like green grapes, white wine, but very subtle. Decent amount of flavor going on. the end has some roasted malts and some chilies. mouthfeel is a bit foamy.

Bottle no. 0497. Black, fine bit of tan head, looks thickish. Smells roasty, some chilli. Creamy body, some carbonation but soft enough. Small chilli burn. Taste is roast, dark chocolate, soft smoky chilli. Decent balance (to the Force). Quite nice.

Can from Eltham Wines. Black pour with a tan head. Nasal tingling aromas of chocolate pudding, caramel, toffee, vanilla. Rich warming taste of treacle toffee, chocolate pudding, caramel, coconut, sweet tobacco. Gullet warming alcohol heat. Robust sweet lingering finish. Cracking stuff!

25/2/2022. Bottle sample courtesy of SHIG, cheers. Pours black with a very small beige bubble head. Aroma is dark chocolate, ashy, roasted malt, lightly smoked, toffee, pepper. Medium sweetness, moderate roasted bitterness, light chilli pepper notes. Quite full bodied, some slickness to mouthfeel, very soft carbonation. Nicely done, though not quite up to expectations. I've a bottle in stock dated 7/2025 so assuming I'm still around I'll revisit this beer about then, see how it's developed. Update 17/5/2025. I was still around! Lots of smoked chilli pepper, quite rubbery, chocolate. Light drying tart finish. Liked it, rating unchanged.

Bottle: Poured a deep black with a tan colored head. Aroma is boosty, chocolate, ashy, smokey, roasted malts. Taste is dark fruits, smokey, roasted malts, metallic, alcohol, spicy, peppery.
