We chose a blend of wild ales featuring @greatlakesmalt Pilsener, wheat and caramel malts and Upper Peninsula Malt Co Pale malt and just a kiss of @milocalhops Cascade. Two different mixed cultures were used in these barrels, as well, making for extra depth of funky complexity and tart acidity. The pour is a beautiful, crystal clear copper with a short lived white foam. The aroma is full of wild yeast funk, subtle caramel and toasted barley notes. The flavor is juicy, tart citrus with sneaky notes of caramel to balance. The finish is smooth from the wheat, yet dry and refreshing. Expect medium high funk and acidity.

Undated can drunk 12/1/24. Bright, deep, honey-maize-beeswax. Small, off-white head quickly to ring. Beautiful nose shows almost no lactic character with tons of fruity Brett and Sacch; noticeable saison quality, and rich, honey-like malt to balance. No aggressive oak, no acetic. Bright pineapple-apricot-lemon-kiwi, again very Brett and Sacch focused with just a bit of tart lactic character. Oak is extremely mild, providing light tannin structure, with plentiful, attenuated malt depth. Juicy, fruity, malty, mellow. Lots of Sacch saison character which is impressively not lost in the other aspects.

Clear, effervescent apple cider vinegar body with no head. Funky tart nose with round barrel notes. Nice funky, tart, sour depth with light fruits and tangy grain. The barrel aging was done with a gentle hand, with just enough mild oak to complement the base.

Pint can from Ridgeview Liquor, 12/18/21. Hazy orange, thin head, poor retention. Aroma of apricot, mild funk. Taste is oak, funk, apricot, citrus. Hints of passionfruit, melon, paper. Bright, sour, well balanced. Nice.
