Co-fermented King of Tomkins County, Canada Reinette, Belle de Boskoop, 20oz pippin and some other unknown apples, with about 400lbs of Italian Prune plums picked from the trees on our farm. We indulged the cider with a long, slow ferment in cool conditions using only the native yeasts that reside naturally on our farm. The plums were immediately pressed off the skins allowing only the inside of the fruit to impart its flavour. The cider was fermented to dryness, then bottled and put through a second fermentation in the bottle in order to carbonate. It's rich, smooth and tart with just a hint of that fleshy inside of the plum that gives it a great caramel finish. It's great to drink now, or you can age it for a little while longer.

Good deep orange body but no foam. Smells of nice bitter plum with some tart apple. Taste is chewy sweet apple, soft plum notes. Ends full, sharp, and tangy. Enjoyable, sweet and straight ahead but well made.
