We fermented this rendition of Nucleation with a brand-new yeast called Cosmic Punch. Cosmic Punch unleashes vibrant passion fruit, grapefruit, and guava notes through the power of biotransformation. Biotransformation is what happens when yeast gets a hold of aromatic precursor compounds that are present in wort, and processes them into different compounds, called thiols, that are intensely aromatic and drastically affect a beer's flavor and aroma. . In order to pack as many bound precursor thiols into the Nucleation wort as possible, we hopped the wort through all stages of the brewing process, from the mash to the whirlpool, with Trident. We then sat back and allowed the yeast to work its magic and transform those bound precursor thiols into free aromatic thiols. A heavy dry-hop of HBC586 and Idaho 7 layered some pineapple, mango, and guava character over the insane citrus that we got from the ferment.

Cloudy gold with a rich white head. Mandarin and some light nectarine. Much like it tastes with a hint of mango. Solid.
