Many Abbey and Trappist breweries released a very limited and high quality allotment of Christmas beer to be consumed during the holiday season. We followed suit, using fine malts from around the world to create this complex and satisfying holiday ale. Deep amber with a long lasting dense khaki head. This ale was dry-hopped to add a layer of noble hop spice to a typical Belgian yeast nose that includes dried fruit, baking spices, toasted marshmallow and nutty toffee. A nice mid-mouth sweetness is accentuated by a hearty mouthfeel but a pleasant hop bitterness aids in drying the finish. A very "clean" and easy drinking holiday ale

100th Payette rating. On Tap at the Boise Brewery/Taproom Hazy medium brown. Small quick coarse light tan head. Light modest aromas and flavors of toaasted malts and dried pitted fruit. Classic profile for a medium weight Belgian brown. Original review text: On Tap at the new taproom. abeled as Beer de Noel Holliday IPA Yes, prominent Belgian yeast. Malty smoth and caramel flavors. If this were called a Belgian Dubbel I would say it was a bit hoppy, but for an IPA... no. Still, smooth and tasty.

Draft at the Taphouse. Dark brown with ruby tinges. Small skin of beige head. Aroma is mildly sweet, pit fruit, raisins. Taste continues, raisins, gentle sweetness. Dubbel? Hell, yes! Original review text: Draft at Bardenay. Darkish pour, small silky head. Belgian yeast prominent in the aroma, not much sign of any hops. Leans heavily on the Belgian dubbel. Interesting.
