Created for our sister restaurant, Caves Saison uses a solera method starting in our oak foeder. A fraction of volume is removed when peak character is reached, then new beer is added and allowed to mature, repeating again, gradually increasing complexity with age. Batch 003 spent eleven months in the foeder molding it into a lovely, fruit-forward young mixed-culture saison.

Brewed for Caves in a historic solera manner, using a portion of the original brew as a mother to be split in two, one portion to be blended with fresh beer for next year, one portion to be packaged for this year.

Light gold body with almost no head. Thin yeast aroma. Light tang in the taste almost no finish

tap at Les Caves on 8/17/13 - It pours cloudy yellow-orange with a lingering white head and has an earthy brett aroma. The flavor is fruity and funky with a finish of mild bitterness and brett. This light and refreshing brew is very flavorful and enjoyable. Great house beer.

On tap at Saraveza's Farmhouse and Wild Ale Festival, pours an opaque cloudy golden orange with a small off-white head. Aroma is full of earthy notes, dirty, musty notes, and barnyard notes. Flavour brings out farmhouse notes, dirty earthy notes, considerable grassy hops and some crusty bread / crackery malts. Really flavourful and dynamic for a 4.2% session saison. Excellent stuff.
