Coolship Saison is brewed using barley, spelt, wheat malts along with oats & hops. It is spiced in the coolship using grains of paradise, coriander & black peppercorns.
Meant to be refreshing & thirst quenching after a hard days work, our saison combines a touch of acidity with lots of citrus character. It finishes dry with a soft hoppy bitterness.

Really weird that I missed this beer when it came out and then never bought it from Fort Point Market in the past 8 years....
Pretty nervous about buying this from the hot shelf at FP Market, but hope springs eternal.
And it doesn't smell oxidized! Ok, step 1 accomplished. Lots of cheesecloth and cheese rind via lactic acidity with tons of cellar must and aged hops. Citrus rind, light pepper, biscuity, ample malts.
Not oxidized or over attenuated. Wow, that's shocking. Really nice, chewy texture from wheat and such with mild spicing in the background and refreshing, not overdone lactic acidity. Well, I'd say I'd like to see a lot more Brett, as there's almost none, but I guess I should just be glad there's little acetic acid. It doesn't say this is barrel aged but it feels like it must be to stand up to 8 years at this low an abv with no detriment. Could be a bit of oak, but the dry spice and lactic acid make it difficult to tell for sure. Not really Saison-like in the classic sense in that it tastes nothing like Dupont, for example. More of a mixed culture farmhouse ale, if you will.
