A smooth sour with beautiful flavours of toasted oak, citrus, vanilla, and light funk. Blend of 2 year old mixed culture sour aged in Syrah barrels and 9 month old wild ale aged in Bourbon barrels.

Medium clear gold body and okay foam. Huge oak and vinegar on the nose, acidic and rustic, nice. Tastes of huge acidic oak, lemony sourness, ends thin but refreshing. Really hitting the mark here.

Poured from the tap. Hazy blonde with white head. Light lactic citrus, touch of oak, just a hint of bourbon. Not bad.

Hazy and pale, but the sourness seems not only yoghurt but something slightly wonky. Canβt put my finger on it, though. On the palate, clean, lactic, touch of oak, hint of sweetness in the finish.

On tap at The Bakery, pours a hazy blonde with a small white head. Aroma brings out light oak, a little citrus and some bugs. Flavour is subtle but reveals the red wine, a touch of bourbon, and wild bugs. Subtle and unusual, but the barrels work well together and there's some complexity that cuts through nicely. Good stuff.
