This beer was mashed using traditional historical methods and was not boiled as tradition requires, fermented by a live mixed culture. Thanks to this, the beer retains its fuller character and matures nicely in the bottle. The taste is clearly dominated by plums and the character of a wooden barrel in which beer has matured for 12 long months. Medium body and sharper acidity. Pleasant wilderness in the finish.

Bottle 0.75l, four years aged. Clear, reddish colored. AROMA- pleasant aged character, sour and sharp, nice plum. FLAVOR- dry, strongly sour and tart, sorrel, sharp, pleasant fruitiness. Light to medium bodied.
Sour, good, sour.

Bottle sample at a tasting at Yoav's place. Nice cloudy yellow. Lots of plums, jammy, some funk, mild to moderate sourness, plastic and candy note.

--Bottled at Bar Central, Stockholm. -- Clear burgundy colour, small head. Tart oaky prune aroma. Tart with medium body and clean rounded mouthfeel. Elegant and tart. Oak and prunes. Low bitterness.
