This beer is collaboration between Dogfish Head, Stone Brewing Co. (Escondido, CA) and Victory Brewing Company (Downingtown, PA).
The idea for this beer germinated way back in 2003 when the three guys (Sam from Dogfish, Greg from Stone and Bill from Victory) formed the BUFF alliance (Brewers United for Freedom of Flavor) - a noble endeavor with the goal to highlight the passion and camaraderie of the American craft brew movement.
So, BUFF didn't really do anything (beyond talk a lot of talk) until 2010 when the three brewers finally got together to jointly brew at beer at the Stone Brewery. Saison du BUFF was first brewed at Stone and then replicated at each of the other two breweries - same recipe, same ingredients, three different breweries throughout 2010. The brewers have a repeat performance planned for 2012!

Bottle as shown. Pours a clear gold with medium frothy white head leaving spotty lacing. The aroma is floral hops and yeast. Thin mouthfeel with a citrus hop and light spice with crisp finish. Easy to drink a good saison from Dogfish Head.

12 fl oz bottle. Pours clear and golden yellow with a huge white head. Aroma is crisp hoppy, vegetable. Selery. Fruity, citric and light peachy. Crisp hoppy. Bitter and light yeasty into a medium dry finish. Overall fruity impression.

Bottle sample at a tasting at Ariel’s place. Thanks Dagan. Clear golden. Spicy aroma of sage, rosemary and a honey-ish hint. Sweet and spicy flavor with malt, a hint of honey, some fruitiness, sage and rosemary. Medium-bodied.

Bottle in NYC. Pours hazy gold with a large, white foam head. Aroma holds lots of grass and herbs. Medium sweet flavour with good herbal bitterness of fresh grass, rosemary and thyme, some yeast, candi sugar, mild alcohol and lemon citrus. Medium to full in body with massaging, creamy carbonation. A bit of boozy warmth in the finish, with more herbal hops, toasted straw, mild bready sugars, some dry citrus. A very nice, strong saison.

Bottle from Hegedorn’s. Hoppy, herbal nose, citrus, grass. The thyme and sage some through most, blending well with the hops. Deep gold with orange tints. Flavor is honey, orange, herbs (a bit too much), with a bitter finish, slightly mucky and astringent from the herbs. Soapy,oily body. The herbs work better in the nose than in the mouth.

Aroma is rather strong on spices. Also some citron and hay. Flavour is spicy with hay, some citron and apricot. A bit too sweet, worse than the Stone version.

12 oz bottle. Pours hazy golden with an off-white head. Potent herbal aroma, sage and thyme, yeasty, spicier rosemary hints indeed. That same herbal flavor of sage and thyme leads the flavor, again yeasty flavors and a little rosemary, biscuit, lemon. A little pepper in the end. Not quite as complex as my perhaps faded memory of the Stone version, but it’s pretty nice.

On tap at the Gaithersburg location. Pours a clear gold with a white head that dissipates to the edges and laces slightly. Aroma has notes of flora and light fruit with a hint of grassiness and backing Belgian yeast. Flavor has a good amount has a good amount of grass with a hint of light flora and light spice.

Clear gold with a large head. Aroma is full of rosemary, earthy spice, yeast, and light sweet malts. Flavor is heavy on the rosemary. Tastes like a spice rack. I kind of enjoy the spice bite but at the same time it is overwhelming. Back and forth on this one.

12 oz. bottle. Pours pale gold with a thin, quickly fading, off-white head. The aroma is very herbal, with notes of mint, dill, and thyme. There are also notes of apples, tea, bitter orange peels, and hay. The flavor is bitter and sour. The palate is light to medium, lively, and dry. The aftertaste is long and sour. Overall, this is a very interesting and unique beer, but the flavor is a little unpleasant.
