This beer is collaboration between Dogfish Head, Stone Brewing Co. (Escondido, CA) and Victory Brewing Company (Downingtown, PA).
The idea for this beer germinated way back in 2003 when the three guys (Sam from Dogfish, Greg from Stone and Bill from Victory) formed the BUFF alliance (Brewers United for Freedom of Flavor) - a noble endeavor with the goal to highlight the passion and camaraderie of the American craft brew movement.
So, BUFF didn't really do anything (beyond talk a lot of talk) until 2010 when the three brewers finally got together to jointly brew at beer at the Stone Brewery. Saison du BUFF was first brewed at Stone and then replicated at each of the other two breweries - same recipe, same ingredients, three different breweries throughout 2010. The brewers have a repeat performance planned for 2012!

Had this piss warm from the trunk of a rental car after hiking the Pemi Loop for two days. Damn it was good. Smelled like foccacia bread. Of the herbs in the brew, rosemary took the prominent role with sage coming in second. Actually very good for an experimental beer like this. Should drink with olive oil and balsamic vinagrette. Got a bottle of this at central market in burlington.

12 oz bottle. Aroma is funky, fruity, and floral--it’s definitely unique. I also get clove. Pours almost clear gold with a medium long-lasting white head. Taste starts out sweet and tart and finishes with a dry hoppy bitterness. The spices are really in your face. Has a fruity flavor--apples--along with the spices. Body is a little thin. This was a really cool experiment.

12 oz. bottle, pours a clear golden with a medium white head. Aroma is full of spices, particularly thyme and rosemary, with the sage and parsley quite noticeable as well. Flavour brings out the thyme and rosemary on top as well, with some citrusy and yeasty notes. Successful incorporation of the spices used - tasteful without being too overbearing or awkward. Quite enjoyable, though far from excellent.

A blonde ale with a thick lacing and creamy off white head. In aroma, a nice honey and spices, italian herbs, smooth. In mouth, a nice spiced malt with herbs, a bit of fruity esters, solvent notes, grassy and smooth. On tap at Three Penny Taproom, April 6, 2012.

Pours clear golden color with white head. Doughy aroma with a hefty dose of spices. Very floral and grassy. Doughy and spicy flavor with some sweet fruitiness. Medium body with lively carbonation.

Draft. Slightly hazy golden color, small fluffy white head, delicate lacing. Aroma of herbs, flowers, but also very slightly medicinal. Taste is white pepper and bitter, with some fruitiness in the middle. Didn’t try this one side by side with thr others, so its hard to compare.

Bottle. Pours a slightly hazy yellow color with a longlasting white head. Has a fruity spicy yeasty aroma with hints of citrus. Fruity spicy yeasty citrus flavor. Has a fruity malty spicy citrus finish.

hmmm....parsley sage rosemary and thyme.... were the three guys sitting around doing a little more than talking shop? perhaps taking part in sharing a marijuana cigarette? I hope they were f******* clambaking a car, cause this is a terrible idea. tastes like a chicken pizza in a beer. really off putting and not at all what you’d want in a beer, maybe in some fried chicken, but not in a beer.

New Beer Distributors DFH sampling: Pours a light golden colour with a white head. Aroma is very intense and spicy (getting all the sage up in there)... definitely more spicy than the Victory version of this beer. Again, the taste really presses forth with the spiciness, but lets loose a pleasant yeast and some nice malts. Overall pretty good, I suppose although adding parsley to anything is a great way to never taste it.

12oz bottle split with Ann. Foggy, practically opaque yellow-tan. Big, fluffy head laces the glass. Lemony herbal aroma. Quite odd and tangy. Great mouthfeel, doughy and effervescent. Similar in some ways to Sahtea, in the way the herbs are well integrated. One of the better US Saisons I’ve had.
