And the last of our saison series (for 2019) is rather different from the previous 3. We still rely on the wonderful wlp590 french saison yeast, but the typical red apple and pear aromas are far in the background. This dark saison gets its complexity from the 7 different malts we used in it.
The aroma is rich with dried plums and some raw cocoa is fairly apparent. The plums are present in the flavor in combination with licorice. Some hints of roastiness and a tarty hint are present in the finish, with both the licorice and dried plums returning in the aftertaste .

On tap at Cajt, Zagreb. Pours dark brown with off white to beige head. Sweetish, bit yeasty, caramel. Dry finish. Medium- bodied. Weird.

On tap at the brewpub. Black, small off-white head. Aroma is yeasty, slightly funky. Fruity esters, pear, sour apple. No dark malt or roast character. Fruity, caramely, light metal, light plastic, some roast in the finish. Dry. Medium body. Moderate carbonation.
