Witness is a bretted Belgian pale ale drawing inspiration from the Trappist Monasteries. Combining the classic Bastonge yeast (from Orval) and then both Brettanomyces Bruxellensis and Brettanomyces Clausenii to condition this beer will be hoppy and fragrant fresh but will also age gracefully like it's traditional predecessors, building complexity in the bottle.

330ml bottle. Cloudy, yellow-ish golden colour with small to average, frothy, half-way lasting, minimally lacing, white head. Bretty aroma with typical sweet-ish bubblegum notes from afar, more funky notes nearby, vinous hints of white grapes. Taste is dry, mildly funky, cautiously bretty, a touch of bubblegum, chalky hoppy overtones, all riding on more a watery basis than a malty backbone. Very promising aroma, slightly disappointing taste.

Das Witness ist ein belgisches Witbier, welches am ehestens dem beschriebenen BIerstil entspricht. EIn gut gelungenes Bier, das ich sehr empfehlenswert finde.

0.33l bottle. This one pours a mild cloudy or even deep blurry looking golden yellowish body with a nice medium to big sized white lacing head on the top. The nose gives me lots of grapefruit peel and funky coriander. A near wheat sweetness detected, yeah but it's also really dry on the nose. Hints of fruity apple and a little bit of yeast. Smells really good. It tastes quite funky also. Twisted grapefruit, lots of bitter peel MD yeast. It has a mild oily texture in the mouth and it's just below average on the prickling carbonation. A little bitter besk in the finish this. Totally get the brett here and it has a somewhat dry tail. Dry yeasty tail that is. Not a huge favorite perhaps, but interesting. 24.02.2017
