Bottle at December Watford Tasting, thanks to Matteo. It pours dark brown with a thick, light tan head. The nose is toast, barnyard, light tartness, juicy apple, pear and a touch of spice. The taste is toast, light roast, funk, tart lemon, green apple, sherbet, parma violets and some spice with a dry finish. Medium body, fine carbonation and foamy mouth-feel. Smooth, tart and tasty. Enjoyable.

Bottle bought someplace I don’t remember. Pours hazy reddish black with a huge frothy mocha head that slowly dissipates while leaving some soapy lacing and trace on the glass. Smell is funky, tannic and spicy with crackers, biscuits, roasted malts, lemon juice, unflavoured yoghurt, lemon zest, black pepper corns, allspice, dark roast coffee, hay, dry soil, leather, cocoa powder. pumpernickel bread, dry wood, dark grapes and hints of red wine. Taste is sour, funky, tannic, spicy and malty with roasted malts, crackers, biscuits, caramel, lemon juice, unflavoured yoghurt, lemon zest, sour milk, hay, dry soil, black pepper corns, allspice, cloves, dark roast coffee, cocoa powder, dark grapes, lychee and hints of cheap red wine. Mouthfeel is dry, tart, velvety and light to medium bodied. Finish is sour with roasted malts, lemon juice, sour milk, black pepper corns, dark roast coffee, hay, moist wood and hints of caramel and cheap red wine. Tasty funky dark saison that fit the pumpkinseed pesto baked salmon it was served with very well.

750 ml bottle. Pours a clear mahogany with very light head. Aromas of brett, biscuits, and sugar. Flavors of green wood, sour candy, and resin. Very sharp and sour at first with a mellower finish. Weak for a sour - very sour for a Saison. Certainly not the later even though this style may not have a good definition. Interesting anyways.

Bottle shared at a tasting at the Beer & Beyond shop. Batch 1013, bottled on 1-31-12. Dark murky amber-brown with a huge beige head. Pleasant funky aroma with oak, vinegar notes, malt and fruits. Sourish flavor, slightly sweetish, with some barnyard, malt, fruitiness and light spiciness. Medium-bodied, lively carbonation.

750 ml bottle into tulip glass, bottled on 6/28/2012. Pours lightly hazy dark ruby red color with a 2 finger foamy and rocky light khaki head with incredible retention, that reduces to a nice cap that lasts. Spotty foamy lacing clings on the glass, with a ton of streaming carbonation retaining the head. Aromas of sour cherry, green apple, pear, grape, clove, hay, pepper, oak, toast, cocoa, light roast, leather, funk, light vinegar, herbal, and yeast earthiness. Damn nice aromas with good balance and complexity of yeast, barrel, and roasted malt notes; with good strength. Taste of lightly tart cherry, green apple, pear, grape, toast, cocoa, light roast, clove, pepper, oak, hay, straw, light leather, funk, light vinegar, herbal, and yeast earthiness. A touch of earthy tartness on the finish; with lingering notes of light fruits, toast, cocoa, light roast, clove, pepper, hay, straw, oak, light leather, funk, light vinegar, herbal, and yeast earthiness on the finish for a good bit. Very nice complexity of fruity/spicy yeast and oak flavors with a nice balance of dark/roasted malts; with a good malt/spiciness balance and zero cloying flavors after the finish. High carbonation and medium bodied; with a smooth, crisp, and prickly mouthfeel that is nice. Alcohol is very well hidden with minimal warming present after the finish. Overall this is an excellent dark saison style. All around good complexity and balance of fruity/spicy yeast, oak, and dark malt flavors; and extremely smooth and crisp to drink. A very enjoyable offering.

Bottle from Salling, Aarhus. Cloudy orangey brown with a big and lasting beige head. Aroma is sweet, malty, caramel, fruity, and light bretty. Flavor is medium sweet and light acidic. Dry and light acidic finish. The carbonation is very high and that’s not a good thing. 230813
