A blend of old lambik and a rustic saison from Brasserie de Silly, which has undergone an extra year of bottle conditioning and ageing.
The beer is made in support of the Heetveldemolen in Tollembeek. This watermill, continuously active since 1440, is located on the Marke river, of which the spring water is used by Silly for brewing. Hubert and Monique and their non-profit organisation mill old cereals into flour for (sourdough) bakers. They also work with cereals grown by local farmers from our cereal collective.
The name for the beer comes from the road past the mill, the Munkbaan. People used to speak of “De Molen van Munck”, since Carolus de Munck from Lennik was the owner of the mill as from 1855. He was also the ancestor of the current owner Monique.

Bottle at ODB. Pours a cloudy orange gold with medium white head that lasts. The aroma is oak, yeast, straw, floral, citrus. Light body, yeast, floral, citrus, light finish, very good.
