A blend of old lambik and a rustic saison from Brasserie de Silly, which has undergone an extra year of bottle conditioning and ageing.
The beer is made in support of the Heetveldemolen in Tollembeek. This watermill, continuously active since 1440, is located on the Marke river, of which the spring water is used by Silly for brewing. Hubert and Monique and their non-profit organisation mill old cereals into flour for (sourdough) bakers. They also work with cereals grown by local farmers from our cereal collective.
The name for the beer comes from the road past the mill, the Munkbaan. People used to speak of “De Molen van Munck”, since Carolus de Munck from Lennik was the owner of the mill as from 1855. He was also the ancestor of the current owner Monique.

Bottle, solid gusher. Cloudy orange color with big foamy white head. Aroma is big Lambic funk, rustic, earthy, lovely Saison freshness at play too. Taste is definitely wheat, dough, not so stinky, just a dash of Lambiek for extra character. Silky mouthfeel, foamy carbonation. Not bone dry, a bit of body left. A bit low flavour compared to the aroma, but a fine beer.

@ Tree House Tasting. "An in between". Orangy color, average sized white head. Smell and taste wheat / malts softly, very pleasant fruity and even softly hoppy notes. Perfectly suitable mouthfeel. Very pleasant! 7-8,5-8,5-8-8,5

Bottle. Gusher. Bit hazy golden with big fluffy white head. Massive oak, spicy yeast, soft funk, grassy, bread crust, bitter hops, white wine grapes. Very funky, not very sweet or sour but a solid light lingering hoppy bitterness. Very nice, really my thing. Really nice!

Gushing to huge white head over veiled orange-golden beer. Horseblanket/farmyard aromas dominating the nose, watercolour paint, rainwater, wet dog, wet straw, exotic fruit; Again watercolour paint, more expressly, less horseblanket. Leaves, straw, sweeter fruit, pineapple. Some restsugars, hinting at de Silly, whilst the nose is all 3Fonteinen. Some slickness, very well- carbonated. Strange beer, the nose all lambic, taste being very different. I'm doubtful about the bottling, pointing towards 3F, rather than de Silly. Txs to Stef!

Bottle. Pours hazy golden orange, large off white head, good lacing. Aroma is dusty, field grass, black pepper, floral notes. Flavor is light tart, hint of sweetness, light funk. Light plus body, high carbonation. 4, 7,7,4,15

Flaska från 3F, Winter pack 2021. Disig gulorange vätska med högt stabilt vitt skum. Stall och funk, fat, syrliga äpplen. Närmare en lambic än en saison även om den senare finns i bakgrunden. Torr, snäll syra, trevlig beska med lite tonictouch. Mycket gott.

Flaska från 3F, 2020. Gulorange med hög vit krona. Först mycket lambic och funk i doften, men efter en stund i glaset kommer saisonen fram mer och mer. Fortfarande en viss syra och stallighet som hänger kvar. Snygg kombo mellan en snällare murrighet och stallighet. I eftersmaken en stor och ihängande beska och bitterhet, skarp och vass, som i en tonic. Mycket gott.

Word is 6,5-7%. Bottle #64/2550. 75cl @ Ratebeer Odense Tasting, January 2022. Pours Hazy deep Golden with a small creamy White head. Earth, mould, barnyard, grains, brett and Wood. Funky and dry finish. Funny.

Léger gusher, dorée virant sur léger paille/orange, col fin blanc vivace.
Arôme est assez funk, ressent bien le côté 3F - ici l'apport de Silly est plutôt discret à apporter - qcq notes fruitées en rétro-nasal.
Palais est plaisant avec de suite une sécheresse marquée , funk, léger sur la barrique avec un assemblage de la saison de Silly qui reste plutôt discret et qui avec les années risque de diminuer encore plus.
Le lambic reste bien dominant avec un côté grains qui perce un peu plus en retrait.
