Padrísimo (Mexican slang for „great!“) is our winter warmer inspired by Mexican hot chocolate. This big stout was robust and complex already before we dropped 20kg of roasted cocoa nibs from Ecuador into the tank along with decent load of vanilla, cinnamon and bucketful of Ancho chillies. These provide not only slightly warming finish, but also nice aroma of smoked plums that mingles with the pastry ingredients. It might smell like Christmas cookie, but finishes dry, bitter and a tad spicy with no sugary overload.

Tök jó a csili, a kávé már kicsit oxidált

50 cl can @ Hervanta, BBE 20.12.2025 Aroma has mild coffee and roastiness. Also mild fruitiness. Flavour has odd cinnamon tones, some licorice, spiciness. Little brother of Prairie beers.

Can 500ml (DO) Opaque colour, big brownish head. Aroma has earthy coffee. Hints of tartness? Full-bodied. Dry, coffeish, chocolate flavour but also touch of earthyness. Chilli is quite mild. Like some kind of infection is around the corner. Drinkable anyhow.

Tap at Bombovar. Full body, medium carbonation, silky mouthfeel. Medium sweetness, med-high bitterness. Malt-centered, with loads of both coffee and cocoa, light chocolate and toffee. Light chilli warmth too, hints of paprika flavour. Very well balanced - rich and intense, yet kinda drinkable. Very good.

This is one of the easiest Mexicakes I've had. Mostly stout, roasty, with some subtle spicy kick, a bit of cinnamon and some dark chocolate. Easy and tasty, but maybe a bit too subtle?
