When legendary orchard man and good friend Rob Uren brought us a little over 600kg of White Beech, a rare apple, once prized by the old cidermakers, we were like kids at Christmas!

We pressed these along with some Major, a super-rich, sweet spicy apple, and Browns, all juicy citrus, first into tank but then subsequently moving it into four barrels, a mixture of ex-cognac, white burgundy and chianti, to finish fermentation.

What developed over time was everything we had hoped for. On the nose this is sweet and perfumed, think ripe peach, honey and lemon blossom. On the palate it is gloriously mouth watering, like stuffing fruit gums into your face one after the other and, although technically bone dry, the fruit and barrel have combined to create an illusion of fruit sweetness that is really hard to believe.

Drink cool. Not cold. Gluten free. Contains naturally occurring sulphites

750ml bottle from Little Pomona. Orange gold colour, afew short-lived bubbles on top and aroma of fruity apple, musty, funk. Taste is sweetish, tangy apple, ripe fruity, with spicy wood barrel, some orange juicy notes, citric acidity and mellow tannin. Medium bodied, low carbonation, dry bittersharp finish. Very drinkable.
