A beautifully poised celebration cider made with the ancestral method, & disgorged by hand! Blended progressively through the pressing season, this bottle combines two grand cider apple varieties: Dabinett & Foxwhelp. First came the Foxwhelp; the fruit was sourced from a magnificent old orchard with enormous trees in the prime of their life, that yielded an extraordinarily aromatic & concentrated juice. It was later blended with freshly pressed, very ripe Dabinett juice & co-fermented before bottling in the late winter.

The cider finished fermentation in the bottle & rested on the lees for over 16 months before disgorging. The result is very fine & delicious, with notable aromas of poached strawberries & peaches from the Foxwhelp, together with orange flesh & leather from the Dabinett. The tannins are soft & ripe, & over time the high acidity of the Foxwhelp has softened & integrated, with the Dabinett giving body & a lovely mouthfeel. Fermented with wild yeasts, with no sulphites or pasteurisation

Bottle pour at crossover blendery. A hazed golden orange coloured pour with a fine white head that lasts. Aroma is semi sweet, vibrant juicy apple, copella, light tart, fresh juicy apple. Flavour is composed of meaty apple, juicy to a bone dry mineral finish,. Palate is uber dry, mineral, fine carbonation. Good stuff.

750ml bottle pour at Cider Salon 2021, Trinity Arts Centre, Bristol, 14Aug2021. Golden colour, no head and aroma of tangy apple, mucky note. Taste is tangy, tart, apple, fruity notes, with some strawberry & peach hints, and zingy acidity. Medium bodied, high carbonation, dry acidic tannic finish. Nicely drinkable.
