The pears were milled, macerated over 24 hours, pressed and run into a tank to ferment naturally. Later it was bottled as a pét nat.
The aromatics are super floral and citrussy, almost quince-like in intensity. On the palate there's yuzu, lime, starfruit, mango, exploding like a tropical fruit grenade. The softest of tannins emerge at the finish and the whole thing is balanced by just a touch of sweetness from the fermentation.
This adores Thai dishes and others that dance alongside fragrant aromatics. Glorious salads, pan fried fish with herby, citrus sauces, and the freshest of fruit tarts.

Sample courtesy of Grumbo, cheers! Aroma is of sugary pears, floral notes, apples and a small hint of funk (but it works really well). Taste is slightly dry and bitter. A hint of spicy with lemon and lime and dry pear. This is very good.

22/7/2021. Bottle sample courtesy of danlo, cheers Ed! Pours fizzy hazy pale yellow green gold with a short lasting bubbly white head. Aroma of sweet pear, toffee, citrus, tropical fruit, flowers, brown sugar, apple. Light tannic notes. Medium sweetness and light bitter/tart. Medium body,, spritzy carbonation. Sweet caramel pear finish. Enjoyed this.

750ml bottle from Little Pomona. Hazy pale yellow gold colour, short-lived white foam head and aroma of tropical fruit notes, lime, floral. Taste is lemon-lime, tropical fruit hints, perry pear, quince, citric with some light tannins. Slick mouthfeel, medium bodied, high carbonation, dry tangy & light tannic finish. Very drinkable.
