Our first harvest activity of the year was late August where we collected the windfalls and a large amout of George Caves. These later apples were a little over ripe but carefully hand picked. The juices were full of flavour but without too much acidity. Half the juice was wild fermented in steel and half pumped into the recently emptied Pomological barrel. The result is a cider that is light and fruity on the nose with a soft rounded flavour from the barrel. This is dry, still, unfiltered and unpasteurised.

750ml bottle from Cat in the Glass. Hazy yellow colour, afew short-lived bubbles on top and aroma of fruity apple, juicy. Taste is tangy, tart, apple, fleshy, fruity, barrel hint, with some citric acidity. Medium bodied, low carbonation, drying acidic finish. Quite drinkable.
