We’re very aware of how much we bang on about it, but we really do feel that there’s a certain something to our beers that make them uniquely Polly’s. Since we stumbled upon a technique recently to dry-hop our beers at colder temperatures, rather than our fermenting temperatures, we feel our beers have been boosted up a level even further. This technique is on full display with Approaching Back; a two hop showcase of Simcoe and Talus – two absolutely incredible but complex hops. Thanks to a generous addition of 35kg split 85/15 in Simcoe’s favour, we’ve been able to accentuate the delicate characteristics of both stateside slammers; bringing the berry, apricot and passionfruit flavours of Simcoe to the front backed up with the rosewater, and pink grapefruit notes from Talus.

Panda 🐼 at home thanks to Colin for this one. A translucent golden orange coloured pour with a fine white head. Aroma is semi sweet, woody orange, pine, loose bready grains, some sticky hop, Flavour is composed of semi sweet, sticky orange, wood citrus, tangerine, grass. Firm bitterness. Palate is semi sweet, sticky hop, moderate carbonation Good.

Can at home, from HOTM online, 01/04/22. Hazed orange yellow with a good sized lasting white crown. Nose is orange pith, grass, pine needle, melon, grapefruit, mixed tropical fruits. Taste comprises orange pith, pine, grapefruit, melon, lychee, grass, airy malts. Medium bodied, fine carbonation, semi drying close spiked with balanced juicy come grassy hop bitterness. Decent enough straight up IPA.

440ml can @ Salopian. Pours misty gold, small patchy head of foam. Aroma has the expectant tropical hop notes, taste is smooth, tropical, sweet, finishing a little dry, carbonation mildly subdued. Decent but lacks a bit of bite.

Can from RAD. Hazy golden colour with a white head. Aroma and taste are piney citrus and light bitter slight piney. Smooth body.

Draft at the Craft Beer Shop, Little Chalfont. Poured a hazy yellow golden colour with an everlasting frothy white head. The aroma is grainy malt, dank hops. The flavour is moderate bitter, light sweet, with a super fresh, crisp, juicy, piney, dank green hop, light citrus, light dry floral hop bitter palate and a lingering bitter finish. Medium bodied with average to soft carbonation.
