Mixed-culture fermented table beer

Ingredients: Malted barley, malted wheat, oats, wheat, hallertau tradition, tettnanger, saaz, brettanomyces, saccharomyces, water

The shimmer of sunshine, a sparkle of laughter and a day without cares. Bubbles, herbaceous hops, the mystery of brettanomyces, and a beer without consequences.

We brewed this lovely little thing for our fellow brewers, to provide a journey for the palate that won’t interfere with work. If you are not a brewer, feel free to borrow their beer, but know that we brewed it for them.

Flight at brewery. Pours slightly cloudy pale yellow with thin white head. Aroma has coriander and ester-y sweetness, saison yeast. Flavour has thin lemon, coriander, crisp malts, bugs, and saison yeast. For a low ABV beer the flavour profile is impressive.

Re-rate: Poured from 473mL can (canned 2023-03-20). Clear blonde with white head. Rustic saison yeast, mild brett and bugs, decent at the abv. Feb 19, 2022 (7/3/6/3/13=3.2): Poured from fairly active 750mL bottle (bottled 2021-04-15). Cloudy pale yellow with huge white head. Quite light and subdued, rustic, saison yeast, brett, very mild lemon note.

Pale yellow with a frothy white head. Light lemon and some funk. Very carbonated, light lemony funk and a pleasant finish. Solid light table beer.

Quite pale. On the nose, pale malt, bit of wheat, some light brett, pedio...the usual Dageraad stuff. On the palate, it's got that lightness, but the same flavour components. A bit of herbaceous hop, gentle bitterness. My benchmark here is Petit Prince and it's not on that level, but it's still a damn solid beer.

Draught at the brewery
Pale blond colour, hazy to cloudy. It's smooth, not as dry or weak as one may expect, the aroma is very nice, with spices and mild earthy touch, the flavour is more mundane, bit of spice and wheat, light straws. Good summer beer.

On tap at Dageraad, pours a hazy blonde with a small white head. Nose reveals all sorts of wild bugs, lots of rustic saison yeast, light funk, and crisp biscuity notes. Flavour is much the same, with a big rustic character, mixed wild bugs, a touch of funk, and a crisp biscuity finish. For 3.2%, there's a good depth to this. Highly drinkable and well-made. Good stuff.

Taster. Appearance: hazy blonde with a white head. Aroma: very nice Brett with some poop. Taste: along the same lines, noticeable Brett bitterness, good carbo, but it's a bit harsh. Overall: easy to drink, refreshing, but it lacks of balance a bit.
