Porto Barrel aged farmhouse

Barrels were seducing us for the longest time and we couldn't resist the temptation. So we filled the first one last May. The most difficult was keeping calm and patient. And at last we are releasing our beloved babies. "Hay Day" is a porto barrel aged farmhouse ale. It's our double first, we've never done barrel aging and never attempted farmhouse with mixed fermentation. It provides delicate hay notes and elegant tartness. Our premier is a blend of two barrels, bottled into completely new hand-numbered bottles adorned with wax gown (or crown, we haven't decided yet), because a dream-project deserves proper wrapping.

Little cloudy orange beer, creamy dense white head, stable, adhesive, leaving a nice lacing in the glass. Aroma: very funky, wild, sourish, very nice, complex, fruity, bit funky, apricots, oxidized, oranges, nice! MF: soft carbon, medium body. Taste: nice acidity, oxidized, fruity, juicy, bitter touch, woody notes, some tannins. Aftertaste: nice acidity, juicy, fruity, apricots, nice stuff.

Lci, My first ukraine beer? I dunno. The porto doesn't dominate but that's good cause the base funk is delish

Bottle 37,5 cl. Hazy golden with a dense, white head. Funky, Brett aroma - cidery. Rich, sweet, apple notes with funk and subtle Brett. Lovely and complex. 271219

Cloudy pale gold, frothy white head with some lacing. The aroma is acid upfront - a pretty complex mix of white wine, cider and notes of apple vinegar. Thankfully that's not all - some mellow fruity notes; not much funk, but there seems to be quite a bit of barrel left in the beer - mostly wood, old wood, some vanilla roundness too. Nice aroma, overall. The taste starts with mellow unsweet fruity notes (macerated apples, grapes?), juicy yet dry feel, just enough acidity to make it a savoury sour beer without getting heartburns, light fruit skin tannins in the finish - a really nice balance between sweet/juicy, the sour and the dry/tannic. Excellent.

375mL bottle, pours a cloudy golden with a medium white head. Aroma brings out loads of wild yeast and some wine barrels. Flavour is quite along the same lines, with a nice peachiness, wild yeast, and farmhouse notes. Funky and fruity. This is surprisingly nice.
