“als water” is perfectly suitable for extensive ageing. I recommend to age the magnum for at least 6 months up to several years. Ageing will round the bitterness, balance out and open up the beer.

1,5l bottle shared at home. copper hazy color, small white head. smells funky,citric, grassy, tobacco, peppery, cheesy, light joghurt. very nice smell. full body, soft carbonation. tastes funky, cheesy, tobacco, hay, grassy, vinous, wood. finishes lightly dry and lightly sour with notes of cheese,tobacco and vinous notes. very nice one, lovely balance and smoothness.

Orangey copper beer with a medium, yellowish head. Peach, peach liqueur, aromatic herbs, sweetish wafts. Sweet, again fruity-peach, nectarine, other green/yellow fruit, bitterish (crab)apples. Medium bodied, despite the acidthinning, soft carbonation. Pretty good, nice fruity esters, if a tad to the sweet side.

Each year, young Dutch ‘sour superstar’ Tommie Sjef launches a special blend in magnum bottles, this time called “Als Water” – because it supposedly ‘drinks like water’, though I hope not. Thanks to the Dutch guy willing enough to share his bottle at Verzet’s New Year’s reception last Saturday in Anzegem. Snow white, moussy, opening but generally stable head, misty warm orange-glowing peach blonde robe. Aroma of gooseberry jam, apricot skin, stewed rhubarb, fruit yoghurt, fermenting orange juice, unripe nectarine, sourdough, pineapple juice, maturing green grapes, dry cider. Tart onset with a sweetish core, very fruity, peach, green apple, ripe gooseberry and white grape mingled with rhubarb and pineapple accents, medium carb, smooth body – but clearly fuller than water, thankfully… Bready to lightly biscuity maltiness soaked in fruity tartness and very (unsugared) yoghurt-like lactic sourness, with the softness of the malts keeping the overall tartness in check; ends vinous and grapey, with a woody undertone, drying lactic effects and lingering malt sweetishness. Very delicate, fruity-estery sour ale, beautifully balanced and polished without added frills – one of the purest, most ‘complete’ and elegant Tommie Sjef sours I had to date.
