We know how much you all liked Fleur du Nord, so we decided to make a bigger, badder version, Fleurs d’Abondance! The beer’s name roughly translates to “flowers of abundance” and was chosen to reflect the significantly increased amount of honey that was used in the production of this beer. Like its predecessor, this beer started as a blend of saisons that were fermented and aged to maturity inside of our French Oak foeders. A massive amount Wisconsin produced apple blossom honey was added to the final blend and allowed to referment to dryness. At bottling, we hit the beer with another dose of this same honey so it could naturally carbonate in the bottle. If De Bij was a saison, this would be it.
