Red Sally is heading to the Wild West, looking for adventure. She stumbles upon a saloon, slams open the doors & falls into a John Wayne story. Sally's surrounded by outlaws with revolvers. She's unshakable & heads straight to the bar, asking the bartender for her red delight, as if she belongs...
In April 2020 our Texan brewer Jordan brewed up this 𝗚𝗼 𝗪𝗲𝘀𝘁 𝗥𝗲𝗱 𝗦𝗮𝗹𝗹𝘆. It’s our interpretation of a Flanders Red with an intriguing interplay of various malts, sage & a barrel-ageing of 10 months in Côtes du Rhône barrels.

Taster @ Vinspecialisten, Aalborg. Pours cloudy red with a White head. Amagerhylden. Nelliker and sage. Wood an red wine. Without the Spice it could have been quite nice.

Pale red colour with quick fading head. Aroma of red fruit and oak. Starts fruity with some almond too. In the middle the sage comes through. Nice dry finish.

21/I/23 - 75cl bottle from Geers (Oostakker), shared with the Cybulski’s @ home, BB: V/2026, bottled: 14/V/21 (2023-86)

Clear ruby red beer, small creamy beige head, unstable, non adhesive. Aroma: nice, spicy, floral touch, bit malty, more spices. MF: ok carbon, medium body. Taste: soft acidity, fruity notes, apples, lactobacillus, bitter, a little woody. Aftertaste: bitter touch, a bit hoppy, herbal, soapy touch.

Reddish cream-coloured head, medium, over veiled red-brown beer. Very perfumed nose, with ripe banana, rosewater, medlar, fruitflavoured mint, faint lactic acid. More lactic acid in the mouth, red fruit (cranberry, strawberry, cherry...), rosewater. Bit vinous character, but at the same time too thin for wine. Feels a bit light, not just the acidthinning, almost watery, lacking body compared to Flemish oud bruins. Generally a bit thin, and not spectacular either for an oud bruin. Room for improvement - but who knows what is in the Dansaert pipeline?
