New larger scale batch prepared for Tilquin Fruit Extravaganza 2021-2022, with 400 gr of organic apples per liter of lambic, in a blend of 50% of 1 year old Meerts and 50% of 1 and 2 years old lambics. First time served on October 23, 2021.

On tap at Meddlesome Moth, pours a hazy golden with a small white head. Aroma brings out a wonderful barnyard funk, with leather and some funky, crisp apple skins. Flavour is funky and complex, with a real nice barnyard and leathery character, minimal tartness, and a touch of apple skins. Damn, that’s the best apple lambic I’ve had. Impressive.

Draft at Foeders. Quite funky, a hint of sulphur, oak, wheat. Similar to the poire, a touch drier and lighter maybe. Still great.

Clear pale blond yellow beer, big creamy dense off-white head, stable, non adhesive. Aroma: earthy, lots of apple skin, nice brett notes, some sulphur, wood notes, brett. MF: ok carbon, medium body. Taste: nice acidity, refreshing, pretty bitter, tannins, more bitterness, dry, lemon, wood notes. Aftertaste: bitter, green sour apples, lots of bitter apple skin, some tannins, fruity notes, brett, earthy and fruity.
